February Recipe:

CROCK POT BRAISED SHORT RIBS

4 lb. beef short ribs
1 tsp. salt
1 tsp. pepper
1 c. flour
2 med. onions, sliced
3 carrots, peeled and chopped into 1 inch pieces
2 potatoes, peeled and chopped into 1 inch cubes
3 tbsp. oil
1 1/2 c. liquid (water, broth or BBQ sauce)
1/2 cup red wine if desired

Dredge ribs in flour, salt and pepper. Brown well. Layer onions, carrots, potatoes, ribs and liquid. Cook on low 8-10 hours or high 4-6 hours. Serve with crusty bread or rice.
