January Recipe:

Breakfast Muffins

Ingredients for one batch

6 eggs
1 cup Bisquick (I used Heart Smart Bisquick)
2 cups half and half or milk (I used fat free milk)
1/2 teaspoon salt
1/4 teasspoon pepper
1/2 cup shredded cheddar cheese
fixings: steamed broccoli, small cubes of ham, browned sausage

Spray muffin tins with non stick spray. Place steamed broccoli or small cubes of ham evenly in the bottom. Mix eggs, Bisquick, milk, salt and pepper together. Pour mixture evenly over the broccoli or ham. Top with grated cheese. Bake for 20-23 minutes in 350 degree oven.
