Recipe of the Month

Mango and Avocado Salsa on Salmon

Ingredients

1 diced red bell pepper
1 diced shallot
1 lime (juiced)
1 ripe mango
1 ripe avocado
3 cloves of diced garlic
1 tablespoon cilantro
1 tsp black pepper
1 tsp sea salt
1 tablespoon olive oil
1.5 pounds of salmon

Mix the diced mango, avocado, red bell pepper, shallot, garlic, cilantro, half of the lime juice, some salt and pepper to taste.  Set aside for an hour.

Drizzle olive oil on the salmon, salt, pepper and the remainder of the lime juice and bake for 18 minutes in a 375oF oven

Put some of the salsa on top of the salmon, serve and enjoy
