March Resolutions

Recipe of the month:

I didn’t make anything too complicated this month.  I had intended on learning to make beef pho (Vietnamese beef noodle soup) but I didn’t have time because it requires at least two days to make.  I even bought all the ingredients to make it, but I’ll try next month.  I did make this really light and delicious salad five times this month.

Balsamic Vinaigrette

INGREDIENTS

3 tablespoons aged balsamic vinegar
1 teaspoon Dijon mustard
1 garlic clove, peeled and crushed through a garlic press or chiopped finely
3/4 cup extra-virgin olive oil
Salt and freshly ground pepper, to taste

Use a whisk to mix the ingredients. It will produce a thicker vinaigrette dressing. One serving will equal 2 to 3 tablespoons of dressing. One cup should easily be enough for 6 to 8 servings of mixed green salad. Refrigerate and store in a covered container. Whisk well before serving.

Salad

One head of green leaf lettuce
3 or 4 tablespoons of cilantro
2 or 3 hard boiled eggs cut into large chunks
1 avocado cut up
1 tomato off the vine chopped into large chunks
shredded cheese (optional)

Toss by hand the parts of the salad with the vinaigrette.

We were standing right at the edge of the stage.  They were amazing live.  I loved the hand bells they used for one of their songs.  The thing we love most about musicians is when they can sing and play an instrument at the same time.

We had a delicious dinner at Newman’s.  I had the halibut with mushroom risotto.  Nick had the prawn and pesto pasta.

After we mailled the inviations we got solicited by a rather interesting man. He thought we were mailling wedding announcements and I said that was last year. He walked with us to our car and asked us to go to www.marriagebuilders.com . He said that website has the best advice ever for keeping a strong and healthy marriage. He also mentioned this was his second marriage and that the advice from that website along with some helpful books have aided him in his new outlook. He recommended a book by Dr. Harley called His Needs Her Needs. He said that so many young people give up after a few problems in marriages and that the initial attraction is gone because people don't put enough into her bank or his bank (bank is a metaphor for his needs or her needs). I don't know why so many interesting people approach us in the most random places. I guess we're approachable people.
